Wondering what to do with old Christmas cookies? Crush them and make a crust for lots of different recipes. Today I made up this recipe and it is delicious. Try it. 
Peach Sunday Sundae
For Crust: Butter your pan well and spread cookies out to form a crust.
For filling: Mix 1 cup sliced peaches ( I used Fredericksburg peaches I got last summer and froze), 1/4 cup sugar (more if you like it really sweet), 2 teaspoons vanilla. Spread on top of cookie crust. Dot with butter. Sprinkle with cinnamon. I use a lot because I love the taste of cinnamon. If you don't 1 teaspoon will be plenty. (If peaches are dry let sit a while so sugar can make them juicy.)
For topping: Mix together 1/3 cup flour, 1/3 cup light brown sugar, pinch of salt, and 1/2 cup oats. Cut in about 1/2 stick of butter until you have pea size pieces. Top the peaches. Sprinkle top with pecan pieces about 2/3 cup.

Bake in 375 degree oven until lightly browned about 25 - 30 minutes.

Put in Sundae cups while still warm and add a dip or two of vanilla ice cream. OOOH, so good!
My recipes are always approximate measures as I don't like to use measuring cups, I just start mixing. So you may want to experiment a little too.
In the summertime, come to Fredericksburg for the best peaches and visit the Texas Hill Country often.

They say if you don't like the weather inTexas, wait a day and it will change. Yesterday it was sunny and 60 degrees. This morning it is snowing and sleeting. Burr! Tomorrow it may be back to normal 60's for this time of year. I certainly hope so.
It is actually snowing and sleeting in this picture. Not sticking to the ground yet. Hopefully, it won't.
I am not a cold weather person. I enjoy sunshine and blue skies. I don't like wearing coats or scraping my windshield. Gloves? never wear the things. Bundling up means restricting movement to this fair weather girl. I'd much rather suffer a few minutes and run in and out than put on all that extra clothing.
Anxiously awaiting green leaves and green grass :)
Like many Texans, we are spoiled. Winter weather comes and goes in a matter of hours. I'm counting the days until Spring already. Picnics, swimming, tubing, hiking, all the things I love to do are just around the corner in a few months. If you like the winter, I hope all ours comes your way. My grandkids like snow skiing but I'd rather stay by the fire.
