Yummy Caramel Corn Recipe…So Easy!
2 Cubes of Butter
1 ½ Cups of Brown Sugar
1 Cup of Corn Kernals
36 Large Marshmallows
Pop 1 Cup of Corn Kernals (I use an air popper ½ cup at a time) and set aside.
On med high heat melt 2 cubes of butter and stir in brown sugar until well mixed and dissolved. Then add marshmallows and keep stirring until completely melted and mixed together well. Once the caramel mixture is done pour 1/2 over the cooked popcorn and stir well, then add the rest of the caramel and mix again.
There you go! You are all done. You can shape into a wreath and add M&M’s for décor and hand it out to friends and neighbors or you can just sit by the fire, watch a Christmas movie and eat the caramel corn right from the bowl. Beware...It's very addicting.

Merry Christmas!
Mr. C
Yeah! I am going to make a batch for my family for the holidays! I LOVE caramel corn!
Julie - I can testify that this recipe is yummy!!! Another twist that I used is Popcorn (popped) and taking white chocolate blocks and melt them in the microwave and pour and stir into popcorn. Lay the popcorn on wax paper to dry. Way yummy too!! Optional on both recipes: add almonds, slivered nuts or M&M's....
Have a great day,
Candace
Is there a group on AR for exchanging recipes? I have the world's best cheesecake recipe, that I would be glad to share.
Julie, and here I've been buying the boxed stuff all along. I need to make some of this homemade variety.
Julie -this is a great recipe, because there is very little work. I used to do elaborate baking, but not -it has to be quick, or I buy. That cheesecake from Margaret also sounds yummy. Thanks.
Julie, sounds easy! Have you made the cornflake wreaths; my kids always enjoyed those and they sound similar?
MMM! This sounds so good and easy to make! I can't wait to try this...

Julie- I guess I could substitute Organic Evaporated Cane Juice for the sugar and organic pop corn but since we use no dairy and no soy, I will have to find something for the butter. Sounds good though. Katerina
Julie,
You're tempting me---shame on you. Seriously, that recipe looks divine.
Hi Julie,
I agree this does sound good but....the calories are out of control, I can't do it! LOL! :)
Julie,
Great tips on the goodies! I am not a baker so I'll pass this to someone who will know how to. Thanks!
Dave
Katerina: Let me know if you are able to modify this. I'm curious. With your great mind I'm sure you will come up with something. It is yummy and a once a year indulgence. Thank you for stopping by.
Diane: Oh it is so good. It's so good that if you do make it, plan on having the entire bowl gone in no time. My family eats it up quickly. Thank you for stopping by.
Suzanne: You are so disciplined, I love it. We all have so much to learn from you. Oh yes, the calories are completely out of control. That's why after you eat this stuff, you go and donate blood to clean out the "stuff" in your blood that you don't want there and to burn 4,000 calories LOL. Thank you for stopping by my friend.
Dave: You don't even have to bake this stuff. My boys made our last batch. It's so easy. Thank you for stopping by and enjoy!

Julie - Butter, brown sugar, marshmallows... so it's a fat free, sugar free recipe. Cool!
Julie sounds reaaly great nothing I like better than a nice low cal snack bet it goes great with a couple of beers.
Hi Julie ~ Not yet, I am still running around like a headless chicken. I will get to it soon, though. Perhaps for our family Christmas movie night! You know, Christmas Vacation, Elf, The Christmas Story! Laugh out loud funny ones..
Tom: You betcha my friend! You could eat that with a glass of wine and you'll be set. Oh, that sounds horrible. Or you could go with Hugh's suggestion and have a couple of beers with it. LOL
Hugh: Well, you'll just have to give it a try my friend. It's the holidays. Thanks for stopping by1
Sarah: This is such a fun time of year to really bring the family even closer. You just keep yourself going so that by the time you have some caramel corn, it will be guilt free, lol.
Happy Holidays!
Hi Julie ~ I have the keeping myself part going part covered for sure! I am happy with it that way, though! Hope you and yours are doing well, my dear...
This carmel corn will never make it into a wreath. I am going to add nuts.
Kathleen: It usually goes from the bowl to our mouths in our house. One year for Christmas we did make the wreaths and pass them out. Adding nuts? That sound good. Have fun and enjoy.
I can't wait to try out this recipe, especially since I am going to be sitting at home for a while with our new family addition...
Michael: I hope you enjoy! Thank you for stopping by and I hope you are adjusting to your new little gift.
Can you say Dr. Pepper, Caramel Corn, great movie on a Plasma...I think I can!
