Happy Centennial Anniversary Arizona
It's Valentines Day, it's my 22nd wedding anniversary and it's Arizona's 100 yearr Statehood Anniversary! There's a whole lot going on today in Arizona!February 14, 2012 is a day that Arizona residents and visitors will celebrate. 100 years ago today, Arizona became the 48th State in the Union. While driving in Phoenix yesterday, I saw many centennial signs on highways and major thoroughfares. There's a plethora of activities planned year round.
Some facts about Arizona
Sun City, Arizona is the first 55 adult retirement community in the United States.
Located 55 west of Phoenix, Palo Verde Nuclear Generating Station, generates more electricity than any other power plant in the United States.
Mount Humphreys, in Flagstaff is Arizona’s highest mountain, 12,642 feet.
Payson, Arizona is the site of the world’s oldest continuous rodeo.
The official Arizona state flower is the saguaro cactus blossom is the official state flower.

The best Chicken Parmesan recipe
The Best Chicken Parmesan ever
4 skinned and boned chicken breast halves
½ cup Italian-seasoned breadcrumbs
½ cup grated Parmesan cheese
1 large egg, slightly beaten
2 tablespoons butter or margarine
1 (14 oz jar spaghetti sauce
1 cup (4 oz) shredded mozzarella cheese
Place chicken between two sheets of heavy-duty plastic wrap, and flatten
to ¼ inch thickness, using a meat mallet or rolling pin.
Combine bread crumbs and Parmesan cheese. Dip chicken in beaten egg;
dredge in breadcrumb mixture.
Melt butter in a large skillet; add chicken, and brown on each side over medium high heat.
Arrange chicken in a lightly greased baking dish.
Pour a light layer of spaghetti sauce over chicken, I like a four cheese sauce or make a homemade sauce and sprinkle with mozzarella cheese.
Cover and bake at 375 for 20 minutes or until thoroughly heated. Serves: 4 servings.
Serve over your favorite spaghetti, pasta or serve with a vegetable.
