There's a whole lot going on today in Arizona!February 14, 2012 is a day that Arizona residents and visitors will celebrate. 100 years ago today, Arizona became the 48th State in the Union. While driving in Phoenix yesterday, I saw many centennial signs on highways and major thoroughfares. There's a plethora of activities planned year round.

The best Chicken Parmesan recipe

The Best Chicken Parmesan ever

4 skinned and boned chicken breast halves

½ cup Italian-seasoned breadcrumbs

½ cup grated Parmesan cheese

1 large egg, slightly beaten

2 tablespoons butter or margarine

1 (14 oz jar spaghetti sauce

1 cup (4 oz) shredded mozzarella cheese

Place chicken between two sheets of heavy-duty plastic wrap, and flatten

to ¼ inch thickness, using a meat mallet or rolling pin.

Combine bread crumbs and Parmesan cheese. Dip chicken in beaten egg;

dredge in breadcrumb mixture.

Melt butter in a large skillet; add chicken, and brown on each side over medium high heat.

Arrange chicken in a lightly greased baking dish.

Pour a light layer of spaghetti sauce over chicken, I like a four cheese sauce or make a homemade sauce and sprinkle with mozzarella cheese.

Cover and bake at 375 for 20 minutes or until thoroughly heated. Serves: 4 servings.

Serve over your favorite spaghetti, pasta or serve with a vegetable.
