Maja Blanca Ingredients:
1 1/2 cups of cornstarch
1 1/2 cups white sugar
4 cups coconut milk
2 tblspns light butter
2 tspns vanilla extract
1 (418 g) can cream-style corn
1 cup frozen corn
1 cup coconut cream
Maja Blanca procedures:
1. Grease two 9 inch round pans and set aside.
2. In a bowl, mix cornstarch and sugar.
3. In a pan, heat 4 cups of coconut cream, butter, vanilla extract, cream-style corn and corn, medium tolow heat and bring to a simmer.
4. Add the cornstarch mixture, mix for 10 minutes constantly to prevent any lumps. Place and set the hot mixture into the prepared pans. Sprinkle molasses on top. Cool before slicing and serving.
4. Molasses topping: in a pan (medium heat), boil 1 cup of coconut milk until coconut oil and coconut milk solid separate, mix constantly for 15 minutes. Continue until the milk solids become golden brown. Drain oil.
