I have to say that I am a little partial to Halloween! I have loved Halloween from the time I can remember walking! When it came time to introduce my kids, they tolerated many Halloween nights with over the top costumes! I have to admit, I never used a costume out of the box, I always found something in the house or in the yard to create a costume for my kids or myself. Being a creative family the tradition carries on through the kids now! I also have an odd connection with Halloween just simply because of my name, most friends have called me "Candi" over the years!

Candied Apples

Candied Carmel Apples:This recipe for delicious caramel candy apples is quick and easy to make. (prep time 20 mins)
PREPARATION: 1. Begin by washing the apples and removing their stems. Stick the wooden skewers securely into the stem end of the apples.2. Boil some water in the bottom of the double boiler. Unwrap the caramels, and place them in the top of the double boiler with the two tablespoons of water.
4. Remove the caramels from the heat. Dip the apples one at a time into the melted caramel and coat them. 5. Dip the tops into the chopped peanuts, and place each apple in a cupcake paper. Chill the apples in the fridge until the caramel is set. Be creative with adding nuts, white chocolate, red hots!
Boil yams and slice (peel of course). Slice apples and put alternately with yams in casserole and cover with sauce. Bake in oven at 350 degrees from 35-45 minutes until apples are tender. SAUCE:

This recipe serves about 20, so you may want to use half only.
Mix all above ingredients well then add:
Mix well and pour into greased cookie sheet. Bake at 350º for 20 min. or until done. Let cool.
