The Heat is On! Miami Welcomes Lebron James and Chris Bosh


For all you Lebron James, Chris Bosh and Miami Heat fans who will be celebrating our newest residents to the Magic City this weekend what better way than to fire up the grill and call over some friends and talk visions of multiple NBA championships over a recipe that's to die for.

Jazz up a simple salmon with some Southern Comfort and bold barbecue spices and you'll be sure to be the MVP at the dinner table.

For the Barbecue Sauce

3 tablespoons butter
1/4 cup finely chopped red onion
1/4 cup, plus 2 teaspoons dark brown sugar
1 teaspoon salt
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon granulated garlic
1/2 teaspoon dry mustard
1/2 teaspoon sweet paprika
1/4 cup cider vinegar
3 tablespoons honey
2 tablespoons Worcestershire sauce
1 cup peach preserves
1 tablespoon peach liqueur (recommended: Southern Comfort)
2 cups ketchup

For the Salmon:
4 skinless salmon fillets, 6 ounces each
2 tablespoons vegetable oil
Salt and ground black pepper

Melt the butter in a medium saucepan over medium heat. Add the onion and cook, stirring often until the onion begins to soften, about 5 minutes. Add the remaining barbecue sauce ingredients to the saucepan and reduce heat to low. Cover with a tight fitting lid and cook, stirring occasionally until the flavors combine and the sauce thickens slightly, about 20 minutes.

Meanwhile, preheat grill to medium heat. Using a pastry brush, lightly brush the salmon with the vegetable oil and season with 1/4 teaspoon of salt and 1/4 teaspoon of pepper per side.

Cook the salmon, for 3 to 4 one side. Carefully flip and lightly brush the fish with the peach barbecue sauce. Continue to cook for an additional 3 to 4 minutes and remove from the grill. Serve with additional peach barbecue sauce on the side. Refrigerate remaining sauce in a glass jar with a tight-fitting lid for up to 1 week.

Makes 4 servings and 4 cups of sauce
