Real Potato Pancakes made for the Jewish Holidays

I normally don't post recipes here but I posted this blog back on 12/21/2007 and since my Holiday of Hanukkah started this week I thought I would report it for anyone who is hungry for some good food made by me. I'll be having another annual party at my home this coming Sunday.

I love eating food and I love potatoes. They are probably my most favorite food. I if you think of it....you can make so many different dishes if you get creative enough. Also you can go to the supermarket and pick up a bag of them for a few bucks.

Now I do not celebrate Christmas. Sorry but I'm of the Jewish faith and during the holidays we hold our annual Hanukkah party at my home. We usually invite all of my family members as well as a few close friends of both Jewish and of other religious faiths. I am not the most religious person but we do have fun and we eat lots of good food. One of my favorites are potato pancakes. My mother usually is the one who will make about 150 of them and bring them to my house. But I get bored with her recipe and now make my own...."sorry Mom you're out and mine are in!"

My recipe is totally different. I do not need to make 150 of them. I will usually make anywhere from 30-40. My reason is because my mothers are small and mine are like giant sized so if you want a simple meal then all you need to do is eat 2-3 of mine with a little apple sauce or sour cream..."UMMM"...I'm getting hungry already and I might have to make a small batch tonight just thinking about them.

First thing you will need is to buy about a dozen of the largest baking potatoes you can find. They usually come separated and not in the bags. I use these for few reasons. They are bigger and they seem to have more flavor. also the smaller ones you buy in the bags are not always good unless you check them carefully to see if they are not starting to rot. I actually go to the store and pick up each one to feel them. I know what you are thinking....no I don't get my jollies off from "feeling my potatoes" but it is important to get them while they are fresh. The same goes for the onions. I usually take the biggest ones they have...just regular ones will do.

My recipe is quite simple...below is how I make them. Please feel free to steal my recipe if you really like my ingredients.

  • 12 Baking potatoes...peeled and sliced into smaller pieces
  • 2 large onions....skinned
  • 2 table spoons of minced garlic
  • 2 large eggs mixed
  • A dash or two of pepper
  • A dash of salt...not too much!
  • 1/4 cup of flour for binding purposes

Potato Pancakes by the Real Deal

Take your potatoes and run them through a food processor until they are in a paste form consistency. Do not shred them. I find this way they stay together much better and also give a different texture to it. Go through the exact same with your onions separately. Put both your potato and onion past into a strainer and squeeze out as much of the water as you can...this will eliminate the chance of you getting splattered by the cooking oil when they hit the pan.

Put them a a large bowl and mix all of the ingredients together but mix the eggs in last. You will then need a large serving spoon and a spatula. Use any kind of vegetable oil and fill a large nonstick frying pan about half way with the oil. (you might have to add additional later). Turn up your heat to about level 9. Test to see if your oil is hot enough by taking a few drops of water on your fingers and drop them into the pan. If it crackles you should be ready to go. Then use your spoon and start to shape your pancakes as you drop them into your oil. Please keep an eye on them to make sure you do not burn each side.

Once each side is golden brown you will want to put them onto a large plate covered with two levels of paper towels. then you need to turn them once you fill the plate up. Continue to add one piece of paper towel to each level until all are finished. Then take another large plate and put fresh paper towels down just to get off the excess oil. This way they won't be too greasy.

I made up this recipe through trial and error and you can always change whatever ingredients you do not like but my potato pancakes make a great meal for all the holidays. They must have been pretty good because they were all gone. I was only able to have the first one off the presses!

If you are wondering where the picture is of the finished product....they were eaten before I could snap a photo. I'm going to have to make an extra supply this year.
