Hearty Italian Stew

The weather is changing and it seems like a good time to share the stick to your ribs food of the season! This has always been a favorite in my home and I hope it becomes one in yours!

 *** HEARTY ITALIAN STEW***

  • 1 POUND GROUND BEEF
  • 2 CUPS FRESH SPINACH-CHOPPED
  • 1 CUP CELERY CHOPPED
  • 1/2 CUP FROZEN CORN
  • SMALL CAN DICED ITALIAN TOMATOES W/ BASIL & GARLIC
  • 3 CUPS ROTINI PASTA UNCOOKED
  • SMALL CAN RED KIDNEY BEANS
  • 2 LARGE CARROTS SLICED
  • 10 CUPS WATER
  • 5 TBL BEEF BASE
  • 1 SMALL CAN TOMATO PASTE
  • TSP GARLIC SALT
  • 1 TSP ONION POWDER

In a large pot add water, paste, garlic salt, onion powder and beef base. Bring to a boil. In a skillet, brown ground beef and drain grease, Add to pot along with kidney beans, carrots, celery and corn. Simmer for 30 minutes. Return to a boil and add uncooked pasta, fresh spinach and diced tomatoes. Cook for 10-15 minutes.

Serving suggestions, garlic cheese bread, tossed salad.

Serves 3-5 people.
