Devron Wilkinson is a classically trained chef who operates his own personal cheffing business. He creates everything from elaborate dinners for 20 to intimate cocktail gatherings to preparing a families meals for the week. On his off days he enjoys shopping at local market. He recently visited the Farmer's market in Union Square and purchased some heirloom tomatoes.
Here's a simple recipe:
Use 1 1/2 1lbs bluefish, swordfish or tuna
3 or 4 heirloom tomatoes
kosher salt 1 to 2 teaspoons
1 tbsp. herbs de provence or Paris Seasoning from Penzey's in Arlington is great (Mass Ave.)
3 tbsp. olive oil
1/2 cup wine
1 onion
Saute' onion in olive oil until transluscent, add diced tomatoes, wine and spices and saute' for 5 minutes
Place fish in baking dish, pour mixture over fish, bake for 20 minutes
