O.K. this is it the one and only crab cake recipe you will use over and over again.
Of course you have to start out with great crab meat. !
1 1/2 cups of salines crackers crushed
1 lb. jumbo lump crabmeat
1/4 cup mayonnaise, 1 1/2 teaspoon. Old Bay seasoning, 1/3 teaspoon. caynne pepper, 1 1/2 teaspoon chives ,(optional) 1 large egg, 1 teaspoon worcestershire sauce, 1 teaspoon regular mustard, a pinch of salt and pepper.
In a bowl, mix saltines, egg, mayonnaise,and seasonings. Add crabmeat and mix gently. If mixture is too dry, add a little more mayonnaise. Shape into 6 cakes. Cook cakes in fry pan, in just enough fat to prevent sticking, until browned, about 5 minutes on each side. NOTE: Crab cakes may be deep dried at 350 degrees 2 or 3 minutes or until browned. cakes may also be cooked in the oven for about 15 or until browned.
