Thankful Thursday, 1/27/11

We have been deluged with snow this year. Early yesterday morning and all through the day and night it snowed like crazy here, dumping hundreds of inches of snow on Chester County. Okay, maybe it wasn't hundreds of inches but it was at least a foot of snow and being stuck in the house doesn't exactly make me feel thankful. I'm pretty much a homebody but I want the choice of going somewhere. When the choice is taken away, I can't stand to be home!

The roads were cleared and I managed to get to the food store to buy the makings for lasagna and ran into a friend who reminded me that it was Thankful Thursday! I had completely forgotten! I forgot last week too and did my post on Friday morning. (Thanks Len)!

The lasagna and meatballs turned out great and I treated myself to big Sicilian olives to go with my salad and life is good. Never underestimate the power of food to lighten your mood. I am especially grateful that when I feel like eating something, I can usually cook it myself, thanks to my little Momma's cooking directions. Anything I can't cook, I can find online and there is a food blog that I love, A Food Obsession, that's my "go to" place for great recipes and background information on all things pertaining to great food. Peter Battaglia is a great guy, the brother-in-law to a friend (Andrew Lenza), and I'm especially grateful to have met him, albeit only virtually. In fact, the lasagna recipe that I used just today is one of Peter's! Peter is very generous with his time and talents and if you love food, you're going to want to subscribe to his blog. I get regular emails and each and every one makes my mouth water!

I am grateful that we were safe and warm through the storm and that we never lost power. I had the pleasure of heading to Harrisburg this week to see the installation of this year's Pennsylvania Association of Realtors President into office. Guy Matteo is an agent in our Newtown Square office and it was a pleasure and an honor to be there to support him. He is a great man and he and his family looked wonderful and his speech was very touching. I was thankful to be able to be part of such a great evening.

So, today, 1/27/11, I am thankful for many things. I hope that you and yours are safe and warm, with plenty of food and love to go around.
