Texas Recipe of the Week - Salad with Goat Cheese, Apples & Toasted Pecans

Here's this weeks Recipe coming to y'all from deep in the heart of kitchens from Texas!

Ingredients:

  • 1/2 cup Pecans, coarsely chopped
  • 1 green apple, peeled
  • 1 tsp lemon juice
  • 1/2 head Romaine lettuce
  • 1/2 head red leaf lettuce
  • 4 oz. Goat Cheese, crumbled

Dressing:

  • 1/3 cup extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • freshly ground pepper

Directions:

  1. Whisk together all ingredients to make dressing
  2. Toast Pecans, slice apples and toss with lemon juice.
  3. Tear lettuces into pieces.
  4. Place all ingredients in salad bowl and toss gently with dressing.

Serves 4
