I was reading an article on Food Poisoning, they listed several solutions to lower the risk of poisoning. One of them was wine - OH BOY, I am there, I can handle this. Next was Garlic - says it is a natural defense against nasty bacterias, ok I am still good, means I can drink wine with my italian food. Next - they recommended Yogurt, not interested but I am sure it is good for you and last but not least - MY FAVORITE Salsa. They cited that cilantro contains dodecenal appearing 2x more effective than anitbiotics. OK I am back in.
Now the reason I commented on this is that I make the best Pico and would like to share it with you:
3 HUGE Tomatoes, 1 huge onion, 1 entire clove of garlic, 3 large jalapenos (seeds and all), bunch of cilantro
Chop everything up in small pieces and mix all ingredients in a large bowl. Then here is the must do: take Garlic/Pepper seasoning and cover the top of the bowl with it (lightly), then take Tony Cachere (Cajun Spice) and sprinkle it lightly over the entire top, Mix all up, cover for 2 hours in refrigerator and eat w/Fritos.
You may have to experiment with the Seasonings, cause I personally like it spicy..... ENJOY, Best pico in Round Rock, Tx
