Left over salmon

All you salmon lovers out there (I know that you only buy wild salmon, those of you from Northwest Washington understand). What do you usually do when you have some left over? Here is a fantastic recipe for those leftovers. Quantities of each item are unimportant to the recipe. Use each to taste. Put your leftover salmon in a bowl and break it up. Add mayonnaise, some stone ground mustard and capers. Stir well so ingredients are well mixed. Remove the skin from halved avocados and stuff with the salmon mixture. Serve with a salad to make a very heart healthy and delicious snack or meal. Since my wife and I developed this recipe, we actually eat more salmon than we used to because we so look forward to the leftovers. Incidently, it doesn't matter if the salmon is baked, sauted or grilled (almost said barbecued, would have probably raised the ire of all you southerners).
