Do you like the convenience of frozen meals but are not too impressed with grocery store, mass produced options? This morning on Regis and Kelly, they made the new Guiness Book of World Records for the largest Custard Pie Fight!

I don't know about you, but personally any type of food fight, be it custard pie or not, absolutely DISGUSTS me! Yes, I am a huge fan of ANIMAL HOUSE and yes, they probably have the most famous food fight but still people . . . come on - throwing and wasting food like that?

I sent them an email expressing my disgust at their stupidity and insensitivity and I hope you will too.

Can you imagine people throwing food like that during the Depression? (not this one!)

How many children went to school hungry this morning? How many people will go to sleep tonite with hunger pains? This is just crazy in this day and age. Are we not supposed to be a civilize nation?

Ok, so the Regis and Kelly Show donated $15,000 to some local food bank but still . . . they could have donated that PLUS the cost of all the pies, all the rain slickers the people wore, the cost of the TV time etc etc etc.

Isn't it time we stopped all this nonsense and put our creative efforts to better use?

We have a local breakfast club that provides breakfast for local hungry children before school each morning. I'm a supporter and I hope you will track down something similar in your neighbourhood (or create one) and make sure at least 1 less child will be hungry tomorrow.

I am so THANKFUL that I am able to lend a helping hand to those in need - join me please?

Peach Pie Cook Time: 50 minutes

Ingredients:

• 4 cups sliced, peeled fresh peaches
• 1/2 cup sugar
• 2 Tbsp. quick-cooking tapioca
• 1/4 tsp. kosher salt
• 1 Tbsp. fresh lemon juice
• 1/2 cup all-purpose flour
• 1/3 cup firmly-packed brown sugar
• 1/2 cup chopped pecans
• 1/2 cup butter
• 1 9-inch pie crust, frozen then thawed is fine if you don't make your own

Preparation:

1. Preheat oven to 375 degrees F.


2. Combine sliced peaches, sugar, tapioca, salt and lemon juice in a mixing bowl. Let sit 15 minutes.


3. In a separate bowl, mix flour, brown sugar and pecans together. Cut in butter with a pastry blender or two knives.


4. Place one-third of the crumb mixture in the bottom of the pie crust.


5. Top with the peach mixture.


6. Sprinkle remaining crumb mixture evenly over peach mixture.


7. Bake 40-55 minutes until the top is golden and the pie is bubbly.


8. Let the peach pie cool 15 minutes before serving.
   

Great with whipped cream or ice cream. Enjoy,
