Decadent Chocolate-Chocolate Cupcakes

Cupcake ingredients:

  • ¾ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ cup brown sugar
  • 2 egg whites
  • ¼ cup applesauce
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoons canola oil
  • ½ cup skim milk
  • ¼ cup semisweet chocolate chips
Frosting ingredients:
  • 2 ounces unsweetened baking chocolate (about 2 squares)
  • 1 tablespoon butter
  • 1/3 cup milk
  • 2 cups confectioner’s sugar
  • 1 teaspoon vanilla

Cooking instructions: Cupcakes
  1. Preheat oven to 350˚F. Prepare muffin tin by lining 8 cups with paper liners.
  2. In a large bowl, combine flour, cocoa, baking powder, and baking soda.
  3. In a separate bowl, combine, sugar, egg whites, applesauce, cinnamon, vanilla, and canola oil. Beat the ingredients together with an electric mixer until blended (about 1 minute).
  4. Gently stir in the flour mixture and milk.
  5. Sprinkle in the semisweet chocolate chips.
  6. Pour batter into muffin cups. Bake 22-25 minutes. To check if done, dip a toothpick in the middle of a cupcake; it should come out clean.

Nutrient content (without frosting):
Per serving (1 cupcake): 151 calories, 4 g fat, 2 g saturated fat, 28 g carbohydrate, 2 g fiber, 4 g protein, 255 mg sodium


Cooking instructions: Frosting*
  1. Melt the chocolate**, butter, and milk together in the microwave (about 1-2 minutes or until melted).
  2. Cool until lukewarm and stir in sugar and vanilla.
  3. Beat with an electric beater until thick.

*This recipe makes about 1 cup of frosting. I suggest glazing each cupcake with 1 tablespoon of frosting (about 75 calories).
** If you’d rather vanilla cream frosting, just leave out the baking chocolate.

Per serving (1 cupcake with 1 tablespoon frosting): 225 calories, 6.5 g fat, 3.5 g saturated fat, 41 g carbohydrate, 2.5 g fiber, 5 g protein, 260 mg sodium

FIRST TIME HOME BUYER TAX CREDIT

The homebuyer tax credit is one of 10 key provisions of the American Recovery and Reinvestment Act signed by President Obama into law on Feb. 17, 2009.

The bill provides for a $8,000 tax credit that would be available to first-time home buyers for the purchase of a principal residence on or after January 1, 2009 and before December 1, 2009. The credit does not require repayment. Most of the mechanics of the credit will be the same as under the 2008 rules: the credit will be claimed on a tax return to reduce the purchaser's income tax liability. If any credit amount remains unused, then the unused amount will be refunded as a check to the purchaser.
