Long Beach has 3 Farmers' Markets per week. I am giving them each their own post since they are in different locations so make sure to check out the other 2!

46th Street and Atlantic Avenue, Long Beach CA 90807, just south of Del Amo Blvd, in the Bixby Knolls area of Long Beach.

Free Parking is available near the market, especially just to the south (a frontage road on the east side of Atlantic); and just to the east of the market (in the CVS parking lot - we have their permission for our customers to park there on Thursday afternoons...)

Baked Beets

Ingredients

• 4 raw beets, each weighing about 8 ounces
• butter or sour cream, to serve

Directions

1. Pre-heat oven to 180°C/ 350°F/ Gas Mark 4.
2. Wash the beetroots but do not trim.
3. Wrap them in greased foil or place in a greased ovenproof dish.
4. Cover tightly and bake for 2½-3 hours.
5. When the beetroots are cooked the skin will slide off easily.
6. Serve with a slice cut off the top, but not skinned, topped with the butter or sour cream and seasoned to taste.

Curried Pumpkin Soup

Ingredients

• 1/2 lb fresh mushrooms, sliced
• 1/2 cup chopped onion
• 2 tablespoons butter or margarine
• 2 tablespoons all-purpose flour
• 1/2-1 teaspoon curry powder
• 3 cups vegetable broth
• 1 (15 ounce) can pumpkin
• 1 (12 ounce) can evaporated milk
• 1 tablespoon honey
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 1/2 teaspoon ground nutmeg

Directions

1. In a large Dutch oven, saute mushrooms and onion in butter until tender.
2. Add in flour and curry powder and mix until blended.
3. Gradually add the broth.
4. Bring to a boil; cook, stirring constantly, for 2 minutes or until thickened.
5. Add the pumpkin, milk, honey, salt, pepper, and nutmeg; cook until heated through.

The Farmers Market is a great way to get the freshest fruits and veggies and we are just fortunate enough to live in an area that supplies lots of produce to the rest of the country. You can't get better produce in the country so take advantage of it!

Basil Cashew Chicken Salad

Ingredients

• 1 cup cooked chicken breast or turkey breast, cut into chunks
• 1 cup cooked white rice or brown rice
• 1/2 cup red seedless grape, sliced in half
• 1/2 cup mayonnaise (Best Foods, Helmann's, or Vegenaise)
• 1/4 cup chopped fresh sweet basil
• 1 teaspoon dried onion flakes
• 1/8 teaspoon black pepper, to taste
• 1/4 cup chopped roasted cashews
• 3 tablespoons crumbled feta cheese

Directions

1. Combine all ingredients; the filling tastes even better when it's had a chance to chill thoroughly, but often I eat it right away.
2. Goes well on croissant or in a pita.
3. Makes about 4 servings.
