Most people don't understand green chile or red chile...but to good New Mexican foodies the question is always GREEN Chile or RED (CHILE OF COURSE!)
I want to live in a state that has a question as a motto...Green or Red! (My always choice is green chile!)
Hello to all my New Mexico friends and soon to be friends! I'm born and raised in New Jersey, but had the pleasure of attending New Mexico State University in Las Cruces, graduating in 1976!
Woof, older than dirt right! (Young enough to say...GO AGIES!)
I was lucky enough to meet so many great people at college, some with old time family recipes (and family chefs)...ummm homemade corn tortillas (with green chile)!
I even got to spend a semester in Mexico and live with a family there...umm storefronts with homemade corn tortillas (umm with green chile, the green chile, not as popular as in New Mexico) !
My love of the food of New Mexico lives on! I want real green chile recipes...tomatillos, pork and green chiles, with not a tomato in sight.
I have perfected a pecan pie (I can't always gaurantee the pecans are from the Mesilla Valley) as they were when, with little regard for small business, we'd take what we wanted.
But my Pecan Pie is still a college Pecan Pie, with a little Jack Daniels for the Pie filling and a little (and a little more) for the cook!
Hey,at this point I've even stooped to canned enchilada sauce...if it's Green Chile Enchilada Sauce!
I'll make my own if you'll give me green chile recipes!
Now help an old lady out, I'm looking for a great GREEN Chile recipe. I think it's really more a pork, tomatillo, chili stew., that what it tastes like!
But heck I'm an American-Italian, so ask me about tomato gravy, meat balls, braciole, osso buco or saltimbocca and I'll tell you whats in it just by taste.
So help me out and I'll share what I know...You first!! Post Green Chile recipes from New Mexico!
OK, I'll even listen to Texans!
(And before you comment on the spelling, chile is the Mexican spelling!)
