Strawberries are good for you and here is a quick summer recipe to make good use of them.

This is a good recipe for old fashioned shortcake that you can pile lots of strawberries and whipped cream on.

OLD-FASHIONED SHORTCAKE

Mix 1 quart sliced strawberries or any seasonal fresh fruit with 1 cup sugar, set aside. In a large bowl, mix 2 cups flour, 2 Tablespoons sugar, 3 teaspoons baking powder and ½ teaspoon salt. Cut in ½ cup butter mix until crumbly. Mix 1 egg and ½ cup cream or half and half. Add to the flour mixture. Mix until moist. Pat mixture into an 8-inch greased pan. Bake at 450 degrees for 15 to 20 minutes. Cool for 20 minutes.

Cut into serving pieces. Split and top with berries and whipped cream

Remember this band from the 80’s? Some of their famous songs include:

Last Sunday afternoon hundreds of us gathered at Hudson Gardens to enjoy an outdoor concert by the Little River Band. They still have great harmony, play amazing guitars and piano and had us all rocking to the beat.

We sat on a grassy hill with our chairs, blankets, coolers, food and our close gang of friends. The weather was perfect at 85% no rain and plenty of shade.

What a sweet way to spend Sunday afternoon and totally stress free for a few hours.

My friend took my phone away from me for the afternoon so I would quit texting and doing real estate business. It was a little scary but I made it.

Life In The Aurora Co Suburbs

Have you ever imagined what it would be like to live in the Aurora suburbs? Life would be so much different living in a peaceful setting away from the fast pace. The light rail is currently in use with one station at 9 Mile at Parker road and Peoria. Soon there will be another station at Iliff and possibly Jewell.
