Every year, when June comes around I take my family on a trip to Fredericksburg where we go to peach orchards and pick our own fruit - not just peaches but blackberries, strawberries, and other fruits and vegetables too. Junction Cafe in Pipe Creek Texas

If you happen to be driving north on Highway 16 from Helotes to Bandera, you will be passing the Junction Cafe. It's on the left at the traffic light in Pipe creek. While you're there, take the time to run in and buy a pie. You can choose from a very nice selection of freshly made blackberry, cherry, pecan, buttermilk, apple, four-berries pies. Thery're absolutely delicious, a real treat that will be appreciated. The pies are often warm when I arrive to pick mine up. If you normally find pastries too sweet, as I do, you'll find these refreshingly not-too-sweet.

The Grey Forest Farmers Market will be back for a whole new season of local products - vegetables, soaps, goat cheeses, etc. The market is held the first and third Friday of each month from 3:00 p.m. to 6:00 p.m. starting March 21st (until November 21st 2008). Helotes

Helotes is known as the Gateway to the Hill Country. The small town of about 6,000 is right outside San Antonio, which over the past 10 years has grown to the edge of Helotes. Made famous first by a controversy over a Super Wal-mart (which wasn't built) and later by the huge mulch fire "Mulchie," Helotes keeps her small town charm - for now anyway. Several neighborhoods are absolutely gorgeous with their beautiful homes and breathtaking views.

Oak Wilt in the Texas Hill Country

Late January/early February is the beginning of the most dangerous season for our oaks-red oaks especially and live oaks. Oak wilt is an infectious disease that kills trees in a relatively short time by destroying their ability to take in water; the trees die of thirst. Fungal mats form under the bark of red oaks, and sap beetles feed on them then spread the fungus over long distances from the infected tree to a fresh cut on a healthy one. Once a tree has oak wilt, healthy trees around it are likely to become infected through the roots, so even if you're careful when you trim your oaks, once a tree is infected, you'll probably lose the entire stand.

Of course you have to trim your trees. When you do, paint the cuts immediately to prevent the beetles from being attracted to the sap. Do this year-round; the weather is too unpredictable, and we can't count on it being cold, hot or dry enough to prevent spreading. In fact, the city of San Antonio has an ordinance that requires you or any tree-trimming service to paint the cuts on oak trees. Many of the tree trimmers don't paint cuts. Make sure you ask them if they do; some will argue with you and tell you it's not necessary. If they don't paint, hire another company or follow them around with a can of paint.
